The Piste and its sister restaurant Couloir are a bit splurgy for everyday lunching while out skiing, but the food is truly outstanding and Chef Hamilton is committed to sourcing as much food as possible from our local foodshed. And then transporting it up to 9,095 feet. In the gondola. In the winter. Not to mention sending all that compost and recycling back down the mountain to get disposed of properly. I don't quibble about a few extra bucks for my salad when the restaurant is going that extra mile.
